Ripping DVD/Blu-Ray collection ???

I've begun to Rip my DVD collection (and a few Blu-Ray's) to use with Plex. Before I get WAY too far into this project, just to find out I'm doing something wrong, I thought I'd see if any of y'all have advice for me. Here's what I'm doing so far: -Ripping with Handbrake -With DVD's, I choose the "Super HQ 480p30 Surround" preset. -I double check that I have the best Audio Tracks selected. If available, I rip AC3 5.1 and AAC downmixed to dolby pro Logic II. Of course I prefer DTS if available. I have a dedicated 4tb drive that I'm doing this all on. Quality is a concern for me, however I wonder if I am ripping too many audio tracks. Should I just be ripping the best audio track and leave it at that? Say I only Rip a DTS track, but a friend with a lackluster amp tries to watch my ripped movie? Will they be able to get any sound? I'm hitting approximately 3-5 gigs per movie. Is this reasonable? Or should I be trying to save space by not ripping so much audio? Also, Since the source of DVD's isn't any higher than 480p, I'm assuming that's what I should be ripping at? Handbrake doesn't do any upscaling, does it? If it does, is it worth it to upscale there, or let my projector do it? (My projector is a Benq w710st...don't know if it upscales or not to be honest. But it's only 720p, so the 480p source doesn't look bad at all on it) I think those are the main questions I have for now. I may think of a few more in a bit. Thanks for any suggestions you can offer!
